
Are you looking for a great make-ahead casserole?
This recipe takes your hash brown potatoes to the next level. The fact that you can make this ahead of time, makes it a perfect casserole for brunch on a special occassion (think Christmas morning) or for an evening accompaniment for your grilled chicken dinner.
Over the years, we’ve tried several versions of this recipe and some are too greasy or too cheesy (if that’s even a thing) or too dry, and this is our favourite.
Ingredients

- 2x 1-kg Hash browns (frozen)
- 1 cup Onion, diced
- 1 can Cream of chicken soup (use Campbells!)
- 1 cup Sour cream
- 1/2 pkg Cream cheese, softened
- 1/2 cup Butter, softened
- 8 oz Marble or cheddar cheese, grated
- 1/4 tsp Salt & pepper (each)
- 1/2 cup Rice Krispies or Corn Flakes cereal, crushed
Instructions
- In a mixing bowl, add hash browns, onion, soup, sour cream, cream cheese and butter. Stir to combine.
- Put in a greased 9″ x 13″ pan.
- Cover with grated cheese and crushed cereal.
- Bake at 375 degrees F, in covered baking pan for 1 hour. Remove lid to brown casserole for the last 10 minutes.
How to store this casserole
In a sealed 9″ x 13″ pan, you can prepare these ingredients and then pop this casserole in the oven (think Christmas morning) or any other time when you are serving a brunch. The flavours really start to work with each other as this sits overnight before baking the next day.
Leftovers can be stored in the refrigerator for up to 3-4 days in a sealed container.
