Cobb Salad

A salad that eats like a meal!

Are you looking for the perfect summer salad that eats like a meal? Are you looking for the perfect salad that serves a large group and packs a lot of punch in flavour, texture and visual appeal? Boy, do we have the salad for you!

How did the Cobb salad originate?

As the story goes, back in 1937 the owner of the restaurant The Brown Derby in Hollywood, California was hungry late at night and went to the restaurant refrigerator. He pulled out a variety of food such as avacado, lettuce, tomatoes, cooked chicken breast and more then assembled them on a plate. This was where and how a great salad came to be!

Ingredients

  • 5 – 6 cups Mixed greens
  • 2 Tomatoes, chopped
  • 2 Avacados, chopped
  • 1/2 package Turkey bacon, cooked, chopped
  • 2 breasts Chicken, cooked, chopped
  • 4 Eggs, boiled, sliced
  • 1 can Corn, drained
  • 1 can Black beans, rinsed and drained
  • 3 – 4 Green onions (scallions), chopped
  • 1 – 2 cups Marble cheese, shredded

When we make this salad, we use a LARGE sheet pan and cover it with parchment paper. We pack on as much ingredients as the sheet pan will hold!

Instructions

Arrange your salad ingredients from one end of the dish to the other OR build inwards from either end. This way, everyone can build their own salad by choosing the ingredients and quantity they want for their own plate.

What salad dressings pair well with Cobb salad?

Well, I’m glad you asked! We usually go for a creamy ranch, but we have served this salad with a green goddess dressing. I’ll share some dressing recipes with you real soon! 😉

How to store leftover salad

This salad could be taken on your lunch to work the next day. When salad dressing is on the side, salads keep in the refrigerator for up to 3 days when properly sealed.

This crowd pleasing cobb salad is on the regular rotation at our house in the summer months! We use a large sheet pan covered in parchment, and fill it up!
