  • 3 cups Tomatoes, chopped use your favourite type of tomato
  • 1/2 cup Sun dried tomatoes
  • 3 cloves Garlic, crushed
  • 1/4 cup Olive oil
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Balsamic reduction
  • 1/4 cup Fresh basil, finely chopped, stems removed
  • 1 pinch Salt and pepper
  • 1 Baguette
  • 1-2 cups Mozzarella cheese, shredded

Instructions

  • 1. In a mixing bowl, stir all prepared ingredients together (fresh tomatoes, sun dried tomatoes, garlic, olive oil, balsamic vinegar, balsamic reduction, fresh basil, salt & pepper)
  • 2. Allow bruschetta mixture to meld flavours for 10 to 20 minutes for best results
  • 3. Cut baguette lengthwise and spread bruschetta mixture on top evenly
  • 4. Shred mozzarella on top
