Oh, the sweet tastes of summer! Let us introduce you to this amazing bruschetta recipe – featuring tomatoes two different ways. Fresh, garden-fresh tomatoes paired with sun dried tomatoes make this appetizer a winner – Every. Single. Time. This simple recipe is the perfect opportunity to capture the flavors of garden ripened tomatoes, fresh basil, garlic and olive oil.
Ingredients
- Tomatoes, chopped use your favourite type of tomato (3 cups)
- Sun dried tomatoes (1/2 cup)
- Garlic, crushed (3 cloves)
- Olive oil (1/4 cup)
- Balsamic vinegar (2 tbsp)
- Balsamic reduction (1 tbsp)
- Fresh basil, finely chopped, stems removed (1/4 cup)
- Salt and pepper (1 pinch)
- Baguette (1)
- Mozzarella cheese, shredded (1-2 cups)
Instructions
- In a mixing bowl, stir all prepared ingredients together (fresh tomatoes, sun dried tomatoes, garlic, olive oil, balsamic vinegar, balsamic reduction, fresh basil, salt & pepper)
- Allow bruschetta mixture to meld flavours for 10 to 20 minutes for best results
- Cut baguette lengthwise and spread bruschetta mixture on top evenly
- Shred mozzarella on top
- Place bruschetta bread on top rack (near the top of oven) and broil for 3 to 5 minutes.

Double Tomato Bruschetta Bread ?
Ingredients

- 1 Baguette
- 1-2 cups Mozzarella cheese, shredded

- 2. Allow bruschetta mixture to meld flavours for 10 to 20 minutes for best results

- 5. Place bruschetta bread on top rack (near the top of oven) and broil for 3 to 5 minutes. Note: watch bread carefully to ensure it is broiled but not burned!
