These scones are a favourite. Remember to freeze your butter for a hour or more for best results!

Ingredients

butter, frozen & grated

sour cream

raisins (optional)
Egg Wash (optional)

egg
beaten, lightly

milk
Instructions
Sift together flour, white sugar, baking powder and salt
Grate frozen butter and cut in with a pastry cutter (or knife or fork or your hands). While mixing, add raisins if you want.
Stir in milk and sour cream to make dough
Place dough in a shallow pan and allow to chill in the refrigerator for 15 minutes
In a small bowl, whisk the egg and 1 tbsp of milk to create an egg wash
Remove dough from refrigerator and cut into desired shape
Brush the tops of the scone with the egg wash
Bake for 15 minutes at 400 degrees F or until golden brown
Move to wire rack for cooling
Notes
Serve with whipped butter or jam. Enjoy!
To make whipped butter use 1/4 cup milk + 1/2 cup butter, softened. Whip until the volume of butter expands.
