Ingredients

eggs
1/2
cup
Spinach
diced
1/2
cup
tomatoes
diced
1/2
cup
mushrooms
diced
1/2
cup
cheese
shredded
Instructions
In a large bowl, crack the eggs and whisk together until consistent.
Dice the vegetables and shred the cheese. Add them to the egg mixture.
Stir together until the ingredients are evenly dispersed.
Using a muffin baking pan, place the muffin wrappers in 6 separate sections.
Using a ladle, divide the mixture throughout the 6 sections and sprinkle extra shredded cheese on top.
Optional: Sprinkle some salt and pepper on top.
Bake at 400 degrees Fahrenheit for 15-20 minutes, checking on them regularly.
