We have all heard that breakfast is “the most important meal of the day” but have you ever stoped to consider why this is so true?

As the name suggests, breakfast breaks the overnight fasting period and can leave your body dependent on the refuelling of vitamins and proteins for lasting energy. Eggs are a great way to get the important nutrients needed and to keep you satisfied and full for longer! This recipe allows you to store in the fridge and enjoy each morning for up to 5 days.

This vegetarian quiche will be the healthy kick to your day that you have been waiting for.

Ingredients

  • Eggs (6)
  • Spinach, diced (1/2 cup)
  • Tomatoes, diced (1/2 cup)
  • Mushrooms, diced ( 1/2 cup)
  • Cheese, shredded (1/2 cup)

Instructions

  1. In a large bowl, crack the eggs and whisk together until consistent.
  2. Dice the vegetables and shred the cheese. Add them to the egg mixture.
  3. Stir together until the ingredients are evenly dispersed.
  4. Using a muffin baking pan, place the muffin wrappers in 6 separate sections.
  5. Using a ladle, divid the mixture throughout the 6 sections and sprinkle extra shredded cheese on top.
  6. Optional: Sprinkle some salt and pepper on top.
  7. Bake at 400 degrees Fahrenheit for 15-20 minutes, Checking on them regularly.

How to Store

Once the morning quiches cool, place them in a sealed container and keep refrigerated. This will keep them for up to 4 days!
