3cupsTomatoes, choppeduse your favourite type of tomato
1/2cupSun dried tomatoes
3clovesGarlic, crushed
1/4cupOlive oil
2tbspBalsamic vinegar
1tbspBalsamic reduction
1/4cupFresh basil, finely chopped, stems removed
1pinchSalt and pepper
1Baguette
1-2cupsMozzarella cheese, shredded
Instructions
1. In a mixing bowl, stir all prepared ingredients together (fresh tomatoes, sun dried tomatoes, garlic, olive oil, balsamic vinegar, balsamic reduction, fresh basil, salt & pepper)
2. Allow bruschetta mixture to meld flavours for 10 to 20 minutes for best results
3. Cut baguette lengthwise and spread bruschetta mixture on top evenly
4. Shred mozzarella on top
5. Place bruschetta bread on top rack (near the top of oven) and broil for 3 to 5 minutes. Note: watch bread carefully to ensure it is broiled but not burned!
Notes
To enhance the flavour of your bruschetta bread, butter the baguette with garlic spread. This recipe is a winner all day long! Enjoy!
