  • Our homemade Chipotle Fajita Spice Mix
  • Olive oil (3 tbsp) – separated
  • Chicken breasts, skinless, boneless (4 pieces)
  • Sweet bell peppers, red, yellow and green (1 each)
  • Onion (1 whole)
  • Soft tortilla shells

  • Shredded cheese (1 1/2 cups)
  • Shredded lettuce (2 cups)
  • Sour cream (1/2 cup)
  • Thinly diced scallions (3 of them)
  • Salsa (1 1/2 to 2 cups)

How to Make Chicken Chipotle Fajitas

Step 1

Mix the spices together and either store in an air-tight container for later use OR make Chicken Chipotle Fajitas immediately.

Step 2

Heat 1 tbsp of oil in a large, non-stick pan/skilled on medium-high heat.

Set cooked chicken aside on a clean plate.
